Located in Buenos Aires' Olivos is La Panaderia de Pablo, one of the Argentinian capitals leading restaurants. Opened in 2010 by creative restaurateur Guadalupe García Mosqueda whose impressive culinary portfolio includes Casa Cavia and Carne acquired the partnership of internationally acclaimed chef Pablo Massey who having initially been mentored at a young age by Francis Mallmann for nine years has traveled Canada, Ireland, Spain, and Singapore found himself in Italy and France, working under Great Chef Emile Tabourdie at Le Bristol in Paris, and Emile Yung in Strasbourg at Le Crocodile. Massey's time spent in Italy included three years in Florence honing his pizza- making skills.
La Panaderia de Pablo offers a contemporary take on the traditional Argentinian panaderia, combining the tradition of Buenos Aires with Mediterranean techniques and the best local produce. Massey's extensive travelling brings a refreshing worldwide approach to the table using only the best locally sourced produce to create his seasonal menu. Expect organic vegetables, local meats traditionally raised farm chickens, fresh eggs, and sea fish accompanied by in- house baked bread.
Inside, the airy space designed by local designer Horacio Gallo utilised the anchoring cement columns by contrasting them with timber wall panelling and black-painted exposed bricks. A clean but modern colour palette includes toffee leather banquets and black-lacquered Thonet inspired chairs and bronze lamps offer a soft glow throughout the restaurant.
