Parisian influenced Maray is located on Liverpool's Bold Street, one of the city's original ropewalks. The surrounding 19th century streets were originally designed to run parallel to one another to allow rope manufacturers to lay out their ropes during production before they were sold to ships at the docks. No longer a manufacturing hub, the ropewalks area has undergone decades of transformations and the latest addition is Maray, a Middle Eastern small plates and cocktail bar specialising in falafel.
Founded by bartenders Thom White, Dominic Jones and chef James Bates, Maray opened in June 2014 in a former fireplace store. The idea behind Maray was inspired by an excursion to Le Marais, the historic district of Paris where the trio discovered eatery L'As du Fallafel ('The Ace of Falafel'), a Kosher Middle Eastern restaurant in the Jewish quarter of the neighbourhood.
London-based designer Martin James Power is the brains behind Maray's minimalist branding and the restaurant's interior, designed by the trio reflects this with a stripped back and uncomplicated decor. Inside, exposed brickwork and layered wallpaper from the previous owners remains untouched and furnishings include tables built on site using reclaimed wooden doors. The interior also features Singer sewing machines repurposed as table legs alongside vintage stools, French stacking school chairs and wall prism lights sourced from a decommissioned Dutch ferry.
Although the space is intimate, diners can enjoy food at the communal tables or sit at the bar and socialise with the bartenders who will be happy to guide you through Maray's creative cocktail menu. Including signature drinks such as the St Germain Whip (Hayman's dry gin, St-Germain, lime, elderflower cordial, cucumber purée and whites) and The Afternoon's Hat (Rye, Aperol, Chartreuse and orange bitters), more sober visitors can purchase a bottle of cold brew coffee by local firm, Duke's Cold Brew.
