Salvaje (meaning ‘savage’) is written in wild, almost illegible, spray paint across the grey cement wall that flanks the entrance before giving way to a glossy black tile interior. It’s the perfect introduction to Salvaje Bakery, a bread shop, cafe and casual restaurant on the border of Palermo Hollywood, where everything that comes out of the kitchen is an exercise in controlled chaos.
The bakery was founded by head baker Germán Torres, a reformed ad man whose dream was to build a sourdough bakery. Although Buenos Aires is a city obsessed with bread, Torres and his team represent a minority of bakers that specialize in artisan sourdoughs. Carob, rye, wholegrain and buckwheat are sliced up and turned into a handful of sandwiches—our favorite is the braised pork shoulder with grainy mustard and greens. Regular pastries include medialunas(croissants) dressed with dark chocolate and sprinkles of granola, apple crumble and chocolate puff pastry shared with a flat white or espresso. Popular weekend brunches are an improvised set of small plate ‘rations’ based on market finds and an emphasis on fresh healthy flavors: tabule and kale salad, eggs with roasted potatoes or braised roast beef with pumpkin.
Previously a storehouse, the indoor space has been converted with shiny black subway tiles and artwork that pays homage to the staff’s love affair with the classic rock music that serves as the permanent soundtrack. Much of the seating is outdoors with industrial furnishings including a large communal bar table decorated with flowers and cookbooks and a full view of a open loft space where bakers knead bread on a continuous loop.
Although mostly a breakfast and lunch destination, Salvaje stays open through the evening (or until the bread sells out) with regular blues nights fueled by freshly prepped Aperol Spritzes.
